Recently I’ve been very interested in experimenting with different “healthier” ingredients. For example, looking for opportunities to add almond butter, alternative flours and sweeteners such as honey instead of sugar. These “healthier” almond butter chocolate apricot cookies are an example of how I’ve learned to incorporate some of these new ingredients.
I’m clearly no nutrition expert, but I am calling these cookies “healthier” because they are gluten free and they are free of traditional table sugar. These healthier chocolate apricot cookies have a very gooey almost brownie-like texture. However, they are definitely not as sweet as a typical brownie or cookie. The main sweetener in this recipe is honey. I also love apricots so I added some dried apricots for a bit of chewiness and a little extra sweetness. But, I just couldn’t help myself and added some chocolate chips as well. It’s all about balance, right?
I’m curious what other ingredients I should be testing out, please let me know if you have any suggestions! I’ve seen some recipes for raw cheesecakes that look interesting, as well as tons of baked goods using almond flour instead of all purpose flour. What have you all tried that you would recommend??
