Almond Flour Chocolate Chip Cookies

After finally conquering my almond flour blueberry muffins last week, I wanted to come up with some other uses for my almond flour.  Since it took me three tries to end up with an edible batch of muffins, I decided to look for some recipes that were already out there this time.

My go to resource for baking recipes and tips is King Arthur.  They have a great collection of recipes and their recipes always turn out well.  I began searching for almond flour recipes and found one for almond flour chocolate chip cookies.  This was perfect!  I love chocolate chip cookies, they are possibly my favorite baked good.  I was so excited to find this recipe I had to try it immediately.

As with all other King Arthur recipes, these cookies came out perfect!  Since I’ve had trouble with almond flour in the past, I pretty much stuck with the recipe as it was written.  I did add a little honey and cinnamon, though.  I also made the cookies a little larger than King Arthur suggested.

Almond Flour Chocolate Chip Cookies

Instructions
  1. Preheat oven to 350. Stir the brown sugar, butter and honey together until well combined. Add the vanilla and egg and stir to combine.
  2. In a separate bowl whisk together the almond flour, baking soda, salt and cinnamon. Add the sugar mixture to the flour mixture and stir until everything is combined. Then, stir in your chocolate chips.
  3. Use an ice cream scoop to scoop out 1-2 tablespoons of the cookie dough at a time. Place on a baking sheet and bake for 12-15 minutes. Enjoy!
