Apple Ginger Cake

‘Tis the season for baked goods galore.  I’ve noticed the recipes I’ve been wanting to post are less about “healthy” treats and smoothie bowls and much more about cakes and brownies.  I hope that is ok with you all!  I’m excited to share this Apple Ginger cake because it is full of warm flavors and not too sweet.  I put LOTS of freshly grated ginger in this. The ginger combined with the apple gives this cake a deep flavor that is desirable for both breakfast and dessert!

Ginger is one of my favorite flavors this time of year.  I love the complexity that it adds to both sweet and savory dishes.  I also love how it balances out sweetness.  I think ginger and apples create a great flavor. My weekly farm basket has been sending me more apples than I know what to do with.  So, I figured I would throw an apple in this cake for a bit of texture and tartness.

I baked this in a bundt pan for simplicity, but I think there are many ways you could use this batter.   This cake would also be great made in rounds and slathered with some cream cheese frosting.  You could also substitute some of the all purpose flour for whole wheat flour and turn this into a totally acceptable muffin.  Or, you could go the other way and make this into beautiful frosted cupcakes!

Apple Ginger Cake
A versatile ginger apple cake batter that is not too sweet and could be served as dessert or a decadent breakfast.

Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  3. In a separate bowl mix the granulated sugar, light brown sugar and butter until thoroughly combined. Add the eggs one at a time and combine. Then, add the ginger and vanilla.
  4. Add the flour mixture to the sugar mixture in three parts, stirring well after each addition. Finally, add the grated apple and mix until just combined.
  5. Bake at 350 degrees for 50-60 minutes, until a toothpick inserted into the cake comes out clean. Enjoy!
