Chocolate Almond Butter Truffles

Lately I’ve been posting quite often about how we’re trying eat healthier in between chocolate almond butter truffles with pistachiosour many Summer trips.  This has become more and more of a regular trend for us lately.  Last weekend we were in Asheville, NC for a wedding.  We enjoyed more than our fair share of fried chicken, biscuits and bbq.  It was all delicious, but now we’re trying to make up for the extra calories before another trip out of town next weekend.

The hardest thing about eating healthy for me is not having my nightly dessert.  I generally cook pretty healthy anyway, but I definitely look forward to my nightly bowl of ice cream, or other sweet indulgence.  Because of this, my new obsession is experimenting with ways to make “healthy-ish” desserts.  Last week we shared our gluten free chocolate cookies, today we’d like to share our Chocolate Almond Butter Truffles with you!

The term truffle should probably be used lightly here.  These are not made with ganache so they are not as creamy as a typical truffle  The almond butter is mixed with oats to give them a nice texture.  And, of course, they are finished by rolling in melted dark chocolate. The chocolate coating satisfies those of us who can just never shake that chocolate craving.  I also chose to top these chocolate almond butter truffles with crushed pistachios.  You could top them with pretty much anything, almonds, sugar or even chocolate sprinkles.  These are also packed with protein, and could even be an on the run breakfast.

Chocolate Almond Butter Truffles
Bite sized truffles made with almond butter and oats then dipped in chocolate for a treat that will satisfy your sweet tooth and keep you full of protein!

Instructions
  1. Combine the almond butter and oats in a bowl and mix until you get a consistency that you can roll into small balls. You may need add more oats if your almond butter is very runny. Roll the mixture into small balls (it generally helps to wet your hands before doing this).
  2. Set the balls aside while you make the chocolate coating. Combine the dark chocolate chips and coconut oil in a microwavable bowl. Melt in microwave for 30 seconds, remove the bowl and stir. Continue microwaving for 5-10 seconds at a time, stirring after each time until the chocolate is completely melted and smooth.
  3. Carefully roll each almond butter ball in the warm chocolate until completely covered. Remove and place on parchment paper. Top with pistachios or your desired topping and place in refrigerator until the chocolate hardens, enjoy!
