Chocolate Almond Egg White Cookiesknow it’s going to be wonderful, and then it just doesn’t turn out right?  Well, that’s how these chocolate almond egg white cookies were developed.  It was a rainy Saturday and I was set on making eclairs.  I’ve made them before, I had a reliable recipe, I cleared my whole afternoon (because they are a bit of a process) only to have my pate a choux burn on me in the oven!

Without enough eggs to start over again, I decided to cut my losses for the day.  However, I still had some egg whites left over that weren’t needed for the pate a choux.  I hate to waste anything so I decided to try to make a cookie with just the egg whites.  To my surprise, these cookies turned out really well!  They are definitely thinner and more chewy than a typical cookie, but adding almonds gave them an interesting dimension. I mean, when there are enough chocolate chips in anything how could it be bad!?

These chocolate almond egg white cookies are a great thing to make if you have some egg whites leftover from another recipe – don’t waste them!  You can also cut the recipe in half, or double it, depending on how many egg whites you have.

These cookies ended up so good that I had them for breakfast again the next morning, and as you can tell by the picture, our dog Bindi wanted a few of her own!  I’m also sharing these at this week’s Fiesta Friday and Cook Share Blog hope you enjoy!

Chocolate Almond Egg White Cookies
Instructions
  1. Preheat oven to 350 degrees. Combine the sugar, cocoa powder, salt and almonds in a bowl.
  2. In a separate bowl whisk the egg whites until they are foamy but not quite soft peaks, then fold in the vanilla.
  3. Gently combine the dry ingredients to the egg whites until everything is incorporated, but be careful not to overmix. Then add in the chocolate chips.
  4. Use an ice cream scoop to scoop out each cookie. Place them on a cookie sheet with plenty of room between them because they will spread. Bake for 15-20 minutes, until the tops become crackly.

  • I’m always looking for new uses for egg whites! It seems I usually have more random egg whites than I have random egg yolks – not sure how that always seems to happen! Glad to see you at Fiesta Friday – my sister moved not too long ago to near the DC area, so I’ll be sure to tell her about your blog – I know she’ll want to follow your adventures.

    • Great, I hope this recipe helps you use up some of those egg whites! Bindi is some kind of lab mix, she’s a rescue and we’re not really sure exactly what she is. I’ll look for a post with Chance, I’m sure he’s a cutie too! I hope your sister is enjoying DC, it’s a great city, especially if you like food 🙂
