Do you ever have a kitchen disaster that just gets you down? You’re all excited to make something, you
know it’s going to be wonderful, and then it just doesn’t turn out right? Well, that’s how these chocolate almond egg white cookies were developed. It was a rainy Saturday and I was set on making eclairs. I’ve made them before, I had a reliable recipe, I cleared my whole afternoon (because they are a bit of a process) only to have my pate a choux burn on me in the oven!
Without enough eggs to start over again, I decided to cut my losses for the day. However, I still had some egg whites left over that weren’t needed for the pate a choux. I hate to waste anything so I decided to try to make a cookie with just the egg whites. To my surprise, these cookies turned out really well! They are definitely thinner and more chewy than a typical cookie, but adding almonds gave them an interesting dimension. I mean, when there are enough chocolate chips in anything how could it be bad!?
These chocolate almond egg white cookies are a great thing to make if you have some egg whites leftover from another recipe – don’t waste them! You can also cut the recipe in half, or double it, depending on how many egg whites you have.
