Curried Red Lentil and Potato Soup

This past week has totally been a soup week.  You know those days when it’s rainy, cold and you just want to curl up on the couch with something warm?  This curried red lentil and potato soup is perfect for those kind of days, which we’ve been having a lot of in our area lately.

I love anything with lentils.  Lentils are my go to when I don’t know what to make.  They are such a healthy protein source.  They are also very comforting and filling.  This soup uses red lentils, which are very popular in Turkish cuisine.  A simple bowl of red lentil soup is one of my favorite meals to have when we’re in Turkey.  This soup combines all the goodness of those Turkish red lentils, along with some curry powder and biber salçası, or Turkish red pepper paste. Biber salçası is one of my favorite ingredients and is used in many Turkish dishes.  It create a deep peppery, spicy taste in anything you add it to.   If you can’t find biber salçası you can substitute anything that adds a bit of spice.  Red pepper flakes or cayenne would be a great substitution.

I also added some small red potatoes to this soup.  The potatoes give this more of stew-like feeling and make it a very substantial meal.   This soup can definitely be a meal on its own, but it’s also great paired with some whole wheat pitas or a piece of crusty bread.

A warm and comforting soup recipe that combines Turkish red lentils, red potatoes, kale and curry powder for a slightly spicy and very filling meal.

Instructions
  1. In a large pot heat the olive oil over medium heat. Add the onion, carrot, garlic salt and pepper. Allow the vegetables to cook until they are slightly softened.
  2. Add the curry powder, tomato paste, biber salçası (or another spice) and stir to combine. Then, add the chicken broth, ginger and bring to a boil.
  3. When the broth begins to boil, add the potatoes. Allow the potatoes to boil for about 5 minutes, then add the lentils. Continue until the lentils are cooked through. Finally, stir in the chopped kale. Enjoy!
