Gozleme (Turkish Phyllo Pancakes)
It’s been about two weeks since we’ve returned from our trip to Turkey, and boy am I missing the food! I miss the morning breakfast spreads of olives, tomatoes and fresh bread. I miss the lunches and dinners full of spicy lamb meals, and of course I miss the amazing and beautiful desserts. One of the meals I miss the most is our afternoon Gozleme snack.
Gozleme is a pancake like snack made with phyllo and filled with cheese. It’s one of those things that is so simple, yet so delicious and satisfying! It’s also easier to make than I anticipated. You can fill gozleme with almost anything. I went with a simple cheese filling, but you could add spinach, chopped veggies or meat to make your own unique combination.
The trickiest part of making gozleme is working with the phyllo dough. If anyone has tips for working with phyllo without ripping it please let me know! No matter how careful I am, I just can not seem to unwrap an entire sheet of phyllo dough without running it! But don’t worry, if that happens, just add another sheet, or a piece of another sheet, to make sure you have a completed covered surface.
