Gozleme (Turkish Phyllo Pancakes)

It’s been about two weeks since we’ve returned from our trip to Turkey, and boy am I missing the Gozleme with toppingsfood!  I miss the morning breakfast spreads of olives, tomatoes and fresh bread.  I miss the lunches and dinners full of spicy lamb meals, and of course I miss the amazing and beautiful desserts.  One of the meals I miss the most is our afternoon Gozleme snack.

Gozleme is a pancake like snack made with phyllo and filled with cheese.  It’s one of those things that is so simple, yet so delicious and satisfying!  It’s also easier to make than I anticipated.  You can fill gozleme with almost anything.  I went with a simple cheese filling, but you could add spinach, chopped veggies or meat to make your own unique combination.

The trickiest part of making gozleme is working with the phyllo dough.  If anyone has tips for working with phyllo without ripping it please let me know!  No matter how careful I am, I just can not seem to unwrap an entire sheet of phyllo dough without running it!  But don’t worry, if that happens, just add another sheet, or a piece of another sheet, to make sure you have a completed covered surface.

Instructions
  1. Begin by unrolling your phyllo sheets. Place 2-3 sheets down and brush them with olive oil.
  2. Arrange the shredded cheese on the phyllo sheets, leaving about 2 inches on each side. Fold the sides up to create an envelope like shape. Make sure that all of the cheese is completed covered the folded phyllo. Brush the top with olive oil.
  3. Heat a small amount of olive oil in a skillet on medium heat. Place the envelope of phyllo and cheese in the skillet and cook for about 3 minutes, until it begins to brown. Then flip it over and cook the other side for 2-3 minutes.
  4. Continue these steps with the remaining phyllo and cheese. Cut into quarters and serve with tomatoes, cucumbers and olives., enjoy!
