Usually, chocolate is my go to for dessert. I’ll gladly choose a chocolate cake or mousse over just about any other dessert. The one exception is this lemon cake. This is a recipe of my Mom’s and it is a huge hit every time she has made it. People even specifically request that she makes this lemon cake.
I have a few really fond memories of lemon cake. I remember my Mom making this cake one of my first weekends home from college. It was such a warm familiar welcoming 🙂 Also, the first time Mehmet met my Mom he brought her a lemon cake, which I think really helped him win her over (not that he needed help).
One other, slightly corny, reason for making this cake this week is that it’s the one year anniversary of me getting to see Beyonce perform in person. I had wanted to see Beyonce for so long and last year I finally got to see her on her Lemonade tour. Lemonade, hence, the lemon cake 😉
In an attempt to make this just a tiny bit healthier, I swapped some of the butter for greek yogurt. While it is certainly not low fat, somehow lemon cake seems like a good warm weather dessert, it seems lighter even if it really isn’t!
