Pumpkin Chocolate Chip Blondies

You know who the best types of friends are?  Friends who bake for you are the best types of friends!  We’re lucky to have one friend in particular who bakes croissants for us, yes, croissants!  Her fresh croissants are so warm and buttery and perfect, we can’t stand to buy them anymore, they’re just not the same.

We felt like we needed to bake something in return for our wonderful friends, but I didn’t what I could possibly make that would be as impressive as croissants.  I began scouring through my cookbooks, looking for an interesting recipe that would show our gratitude.  I found the winning recipe in a cookbook called Butter Baked Goods by Rosie Daykin.  The book had a recipe for Pumpkin Chocolate Chip Blondies that sounded seasonal and absolutely perfect.

I edited the recipe just a bit to include some whole wheat flour as well as replacing some of the sugar with honey.  These blondies are a little more cake-like than I expected, but still very good.  The pumpkin flavor definitely comes through and of course a few chocolate chips make everything better!

I know these blondies are quite on par with croissants, but hopefully they succeeded in showing our gratitude!

Instructions
  1. Preheat oven to 350 degrees. Combine the flours, pumpkin pie spice and salt in a bowl and stir.
  2. Beat the butter and sugar together. Then add the honey, egg, pumpkin puree and vanilla and stir until combined. Carefully stir in the chocolate chips.
  3. Pour the batter into a 9X13 baking dish and bake for 35 to 40 minutes, until a toothpick inserted in the middle comes out clean.
