This rice noodle salad recipe is the result of trying to make some room in our small kitchen. Any of you who have ever lived in a small apartment can understand the struggle of trying to fit everything you own into such a small space. We’re constantly trying to find new places to hide rolls of paper towels, boxes of pasta, luggage etc. Recently, we bought some chopsticks on Amazon, not realizing that chopsticks pretty much come in only 100+ packs. So, we when they arrived we had to figure out where to put away/hide all of these chopsticks. Currently, they are hidden in the laundry closet until we find another spot for them.
In an attempt to deplete our supply of chopsticks, we’ve been making more Asian food at home. This rice noodle salad is a recipe that came out of wanting to make something that would allow us to use up some chopsticks, as well something that would be a light early Summer meal.
Rice noodles cook extremely fast, which means that this dish takes almost no time to pull together and is a great weekend option. It can definitely be a meal on it’s own, but also works as a side or a great addition to a Summer potluck or bbq.
