Savory Ricotta Pie with Caramelized Onions

It’s officially February, which means it’s officially getting tougher to stick to our New Year’s resolutions, right? While I definitely still have the intentions of making as many healthy swaps as possible this year (hence all the almond flour recipes), sometimes you just need a delicious cheat meal. This ricotta pie with caramelized onions is a cheat that is totally worth it.

I love a good slice of white pizza, and this ricotta pie is basically full of the same goodness that tops a good white pie. Ricotta and parmesan make for a cheesy, salty filling. Adding caramelized onions to anything is basically always a win. If you don’t feel like taking the time to caramelize the onions, you can definitely just sautee them until they’re translucent, but caramelizing them gives this an extra luxurious feel.

If you’ve never caramelized onions before, this recipe is pretty helpful.

I also added some chopped kale to my filling.  Why?  I’m not totally sure.  I guess adding a bit of green is always good, and makes me feel a little less guilty about this cheat meal.

The great thing about this ricotta pie is that you can eat it for any meal.  It makes a great breakfast, lunch, dinner or just a midday snack.  You can also make this super simple and quick to put together by using a store bought pie crust.

Savory Ricotta Pie with Caramelized Onions
A wonderful savory pie filled with ricotta, caramelized onions and kale.
  1. Preheat oven to 400 degrees.
  2. Combine the carmelized onions, ricotta cheese, heavy cream, milk, egg, salt and parmesan in a bowl and stir until the egg is lightly beaten and all the ingredients are combined. Then, stir in the kale.
  3. Scoop the ricotta filling into a pie crust.
  4. Bake the pie at 400 degrees for 35-45 minutes, until the filling has set and the top begins to get golden brown. Enjoy!
