Thai Chicken Sausage Lettuce Wraps

Wow, I can not believe how long it’s been since we posted!  Time has really gotten away from us the past few weeks.  We’ve been traveling constantly for weddings and trips with friends which has been great, but of course leads to eating a lot of not so great for you food.  When we arrived home last Sunday night, we were ready to eat something a little lighter, but still full of flavor.  These Thai chicken sausage lettuce wraps did the trick.  They are super flavorful, but eating anything in a lettuce cup just makes you feel like it’s more healthy, right??  The butter lettuce also adds a great crunch to these wraps.

With all of our travel, there has not been much time for grocery shopping, so I was relying on whatThai Chicken Sausage I could find for this Sunday night meal.  Luckily, I had received my From the Farmer basket earlier in the week which contained this delicious Thai chicken sausage.  Anyone living in the DC area should totally check out this company, they deliver beautiful produce to your door and have an amazing selection of other foodie delights as well, such as these sausages.  Even if you’re not in this area, I totally recommend checking out your local CSA, it is such a great way to discover local ingredients and support local farmers.

Since these sausages were already packed with Thai flavors, I didn’t need to add much to them when cooking.  However, you could absolutely make this recipe with regular ground chicken or ground turkey and add additional Asian ingredients to up the flavors.

Instructions
  1. Heat olive oil in pan on medium heat. Add in the celery and onion and cook until slightly softened. Next, add the chicken sausage and cook until browned.
  2. Stir in the soy sauce, grated ginger and salt and pepper to taste.
  3. Let the chicken mixture cool down for a few minutes, then spoon it onto the lettuce leaves. Top with chopped scallions, grated carrot, sesame seeds and siracha if desired. Enjoy!
